Butterbur sprouts “Fuki-no-to”

Wild butterbur sprouts usually appear in February (early Spring) in Chichibu but this year the Winter was extra cold and we couldn’t find any until March. We like to eat them deep fried as “tempura”, or sauteed in miso and sugar and used as a condiment to rice.
